This spicy Chardonnay displays powerful lemon zest, vanilla, cinnamon and white pepper, accented by honeysuckle, rose petals, orange blossom, and caramel. Faintly sweet and smooth, a hint of oak makes for a pleasant and persistent finish.

SENSORY

This spicy Chardonnay displays powerful lemon zest, vanilla, cinnamon and white pepper, accented by honeysuckle, rose petals, orange blossom, and caramel. Faintly sweet and smooth, a hint of oak makes for a pleasant and persistent finish. This wine is an excellent match with Pacific-rim, cajun, or cuban cuisine.

CRAFTED

The 2015 Chardonnay was hand-picked from the Goodchild Vineyard in Santa Maria Valley in Santa Barbara County, which produces small berries with very compact clusters, yielding ripe, full-flavored fruit. The grapes were gently pressed, then settled and fermented as in 100% stainless steel. Upon completion of fermentation the wine was transferred off the lees and aged in 90% neutral and 10% for approximately six months. To add richness, viscosity and touch of sweetness, an addition of 15% Moscato (0.7% Residual sugar) from Los Alamos Vineyard was added.  After being cold stabilized, and cross-flow sterile filtered, the final blend was bottled to nearly 220 cases of 12/750mL bottles in July, 2016.

CELLAR

Enjoy now, or allow it time to develop well over the next four years. Serve chilled, or just slightly below room temperature to bring out it’s best aromatics.
