Cherries, raspberries, pears, with faint banana peel and dried chili flakes are accented by rich strawberries, red apples, watermelon with a long peppery finish. This wine's medium body is framed by bright acidity on the finish.
The 2016 Rose was made in the traditional Bordeaux "saignee" method, Siagnee translated from French means "bleeding" or "to bleed off". This method calls for slowly draining wine from a red ferment usually within the first 48 hours of crush when the wine has had some contact with skins, producing a much more vibrant color and slight tannin structure. Merlot from the Sunstone Estate vineyard and the nearby Giff's Vineyard were blended, fermented using Aroma White yeast from Enartis USA and aged in neutral french oak for 5 months before being blended with rose of Grenache from El Camino Real Vineyard. On April 6th, 2017 the wine was bottled to approximately one hundred eighty-eight 750mL cases and twenty-four 1.5L magnums.
Best consumed in its youth to enjoy the freshness of the wine, Sunstone’s 2016 Rosé will develop some additional length and body for up to 5 years in bottle.
