The 2016 Sauvignon Blanc displays aromas of pineapple, tangerine, honeysuckle, gardenias, citrus zest with subtle hints of flintiness and oak which are accented by melon and cantaloupe and a nice finish of apricots and white peaches. Bright acidity is complimented by a medium viscosity. We recommend enjoying now through 2021.
This 100% Sauvignon Blanc was made using grapes from two vineyard sites within the Santa Ynez Valley AVA. Picked at night to ensure the coldest fruit possible the lot was gently pressed off the skins and left to slowly ferment in a stainless-steel tank. Post fermentation the wine was filtered and left to age in tank before being bottled to approximately 540 cases in May 2017.
