100% Cabernet Sauvignon, Sunstone Estate Vineyard, Santa Ynez Valley
This Estate Cabernet Sauvignon displays aromas of licorice, black currant, and lingonberry, with warm vanilla toast, soft herbs, and baking spices. Medium plus acidity is married with medium soft tannins, with dried rose petals and cedar. We recommend cellaring from 5-10 years.
On October 9th, 2015 just shy of three tons of organically-farmed Cabernet Sauvignon was hand-picked from the Sunstone Estate Vineyard. The grapes were gently crushed and de-stemmed before being fermented in a chilled open-top stainless steel fermentation tank. The wine was inoculated using BDX yeast and left to ferment partially carbonic for almost two weeks. After primary fermentation the lot was aged in one year old Seguin Moreau barrels for a total of 20 months. On August 12th the four top quality barrels were bottled to a total of 80 cases.
Our Estate Cabernet Sauvignon pairs wonderfully with a roasted prime rib with porcini jus, braised lamb shanks, or a grilled burger topped with caramelized onions and bleu cheese.
We recommend properly cellaring from 5-10 years.
