TASTING NOTES

The 2016 Estate Cabernet Sauvignon features an inviting nose comprised of candied cherries with hints of black licorice, baking spices, and cocoa powder. Plentiful red fruit notes like ripe raspberries and cranberry sauce abound on the palate as you savor the enjoyable chocolate and woody undertones reminiscent of s’mores on a campfire.

WINEMAKING

Grapes for the 2016 Cabernet Sauvignon come from the two-acre vineyard block behind the winery. This low-yielding vineyard produces high quality, highly concentrated fruit. One-third of this finished wine was from our 2016 STOMP event where our Wine Club members conducted a competitive pick of this block and the resulting fruit was foot-stomped and left to ferment whole-cluster uninoculated. The other two-thirds were hand-harvested one week later, gently de-stemmed and crushed to open-top fermentation vessels. The must was inoculated using FX10 yeast and left to ferment for three weeks before being gently pressed off the skins and left to age in half new and half used French oak barrels for 22 months. In August 2018 three barrels, 2 of which were new, were selected from these two separate lots to be blended, filtered and bottled to just 72 cases.

FOOD PAIRING

Balsamic-glazed beef tenderloin, pepper crusted grilled tuna steak, and brisket and mushroom stroganoff are all natural fits to pair with the 2016 Estate Cabernet Sauvignon. For less meaty options you can also enjoy cheddar mac-n-cheese or ziti with tomatoes and smoked gouda.
