Dark fruit aromas of baked fig and candied plums meet with fresh berries and notes of cocoa powder, cinnamon, tobacco leaf, and baking spices. Firm tannins and juicy acidity are well-integrated into a palate featuring sour cherries, tart black plums, cigar box, coffee beans, and spice.
Grapes for the 2017 Estate Cabernet Franc come from the small vineyard block behind the Sunstone production facility. The fruit was hand-harvested at night and delivered to the winery before sunrise. Upon arrival the fruit was de-stemmed and lightly crushed to stainless steel to ferment for three weeks. Post-fermentation the wine was lightly pressed off the skins and left to settle for three days before being racked off the lees and barreled down. After 19 months of aging, only the highest quality barrels were hand-selected and bottled to just 172 cases in July 2019.
Higher acidity makes it possible to pair this Cabernet Franc with tomato-based dishes, vinegar-based sauces (Smoky BBQ anyone?), or rich legumes like black beluga lentils. Specifically, try Chicken Tomato Curry, Lentil Salad with Goat Cheese & Walnuts, or Spaghetti & Meatballs with Oregano Tomato Sauce.
The 2017 Estate Cabernet Franc can be enjoyed now and for up to an additional 6 years if stored in proper conditions.
