Aromas of blackberries, currants and fresh squeezed cherry juice combine with notes of grilled bell peppers, black licorice, and cracked white peppercorn on the nose. Sour cherry and tart cranberries on the palate are balanced out with softer notes of spiced plum pudding, and caramel and dark chocolate sundae. Plush tannins are showcased on the long finish.
Grapes for the 2017 Estate Cabernet Sauvignon come from our 1.1-acre lot planted in 1990. These 29-year-old vines produce a consistently low crop yield due to pruning practices meant to ensurethe longevity of the vineyard. Overnight on October 19th, 2017 just under three tons was harvestedfrom this block, de-stemmed and lightly crushed to small fermentation bins where it was left to cold-soak for three days. Once inoculated the bins were punched down for two weeks before beinglightly pressed off the skins. After a two-day settling the wine was barreled down to 50% newFrench oak and left to age for 21 months. In August 2019 seven barrels were hand-selected,blended and bottled to about 160 cases.

The 2017 Estate Cabernet Sauvignon can be enjoyed now and for up to an additional 8-10 years if stored in proper conditions.
