GRAPE BLEND & SOURCE
A spicy, weighty nose of black pepper, nutmeg and graphite is complemented by underlying notes of chocolate-covered cherries and ripe strawberries. Subdued acidity and chalky tannins on the palate give way to an interesting mix of clove, under-ripe blackberries and raspberry tart.
Grapes for the 2017 Villa Sole come from the small vineyard blocks adjacent to the world-renowned Sunstone Villa. The grapes for this blend were picked and weighed separately then partially de-stemmed and blended to one vessel and fermented native for three weeks. Choosing to ferment using just the yeast that naturally occurs in the vineyard has been a long-held tradition for this wine. Post fermentation the wine was lightly pressed off the skins and left to settle for three days before being barreled down to 25% new French oak. After 19 months of aging the wine was blended to taste and bottled to just 172 cases in July 2019.
The noticeable tannins in this blend make it an excellent choice to match with Steak and other red meat dishes. Keep seasoning simple, such as salt and pepper. Brie and Camembert Cheeses and Bacon Salad with Bleu Cheese will also pair well.
The 2017 Villa Sole can be enjoyed now and for up to an additional 4-6 years if stored in proper conditions.
