A complex nose of dark fruit including dried red plums and blackberry preserves intermingles with pronounced earthiness and notes of desert dust and pizza crust. On the palate, subdued flavors of mashed pluots and triple berry tart are supplanted by a diverse mix of black pepper, cinnamon sticks, and smooth river rock before culminating in a slightly smoky finish.
Grapes for the 2018 Santa Ynez Valley Cabernet Franc were picked from the Rock Hollow Vineyard in Santa Ynez. This site was chosen as a prime location to produce a lower alcohol, fresh early bottling. Grapes were hand-picked at night to preserve naturally-occurring acidity and ensure cold soak. Upon delivery to the winery the grapes were de-stemmed and lightly crushed to an open-top tank. Twenty percent of the fruit was segregated for whole-cluster carbonic maceration. The main lot was fermented on the skins for 21 days before being drained and light pressed off the skins. The carbonic lot was left for two weeks before being pressed off the skins at two brix and continued to ferment for four days. The two lots were barreled down and left to age separately for eight months in 100% neutral French oak before being blended and bottled to just 330 cases in August 2019.
This Cab Franc will pair well with roasted rosemary chicken, white fish, Portebello mushrooms, green olives, and quiche.
The 2018 SYV Cabernet Franc can be enjoyed now and for up to an additional 3 years if stored in proper conditions.
