Aroma: sandalwood, clay/loam soil, toasted nuts, red currants, blackberries, licorice, bay leaf, tea leaf, lavender, limited aroma. Palate: Blackberry, pepper, sandalwood, cedar, raw cocoa, toasted coconut, raspberries, cranberries, gooseberries, ground coffee bean, tobacco smoke.
WINEMAKING About 68% of the grapes used in the Fred's Red blend came from the Sunstone Estate, including all of the Merlot and most of the Cabernet Franc, with the rest coming from four additional vineyards in Santa Barbara County. Our blend varietals were made grape to bottle and aged separately. We aged our varietals individually, mostly in neutral French and American oak, with a small percentage using new French oak, for 16.5 months. Blended and bottled to 350 cases in April 2020.
This beautiful blend pairs wonderfully with a roasted prime rib with porcini jus, braised lamb shanks, or a grilled burger topped with caramelized onions and bleu cheese.
The 2018 Fred's Red can be enjoyed now and for up to an additional 5-7 years if stored in proper conditions.
