GRAPE BLEND & SOURCE
95% Sauvignon Blanc; 5% Semillon
Refugio Ranch Vineyard
pH: 3.10; Acidity: 6.4g/L; Alcohol: 13.8%
3 months in Stainless Steel
The 2018 Sauvignon Blanc features an intensely aromatic nose of grapefruit, pineapple, and guava with underlying herbal notes including the subtle bite of green bell pepper. Lively acidity on the palate is complemented by notes of lemon zest, white peach and bubble gum, leading to a long, chalky finish.
Grapes for the 2018 Sauvignon Blanc were grown at Refugio Ranch Vineyard along the Santa Ynez River. During the ripening season Sunstone conducted a canopy management trial that resulted in two very special and unique wines. Half of the block was leaf-thinned around the fruit zone to help promote sun exposure in the morning and afternoon, when hours of exposure were more but the intensity was not as high. This resulted in a wine with more herbaceous characteristics. The other half was leaf-thinned above the fruit zone to allow for mid-day, more intense sun exposure. This resulted in a wine with passionfruit, citrus and honey aromas.
The grapes were hand-picked at night to preserve naturally-occurring acidity and were delivered to the winery before sunrise where they were lightly pressed to stainless steel tanks. The two lots were left to ferment separately for three weeks before they were racked off the lees and stainless steel aged for three months. The finished wine is a blend of the two lots as well as a small 5% addition of Semillon produced from the same vineyard.
Enjoy the 2018 Sauvignon Blanc with a variety of dishes, including Citrus & Herb Chicken, Shrimp Salad with Garlic Mint Dressing, Thai Fish Cakes, White Pesto Spinach Lasagna, Herbed Goat Cheese, and good, old-fashioned Popcorn.
The 2018 Sauvignon Blanc should be enjoyed now and for up to an additional 12 months. This wine is not a candidate for long term aging.
