GRAPE BLEND & SOURCE
Aromas of white peach, lemons, Asian pears and fresh cut pineapple are framed by underlying minerality, stone character and a hint of cotton candy. On the palate, flavors of honeysuckle, canned peaches, and white pepper are brought together by crisp acidity and a lingering floral finish.
Grapes for the 2018 Soleil Blanc come from our partner vineyards across the Santa Ynez Valley. All fruit was hand-harvested at night to preserve naturally-occurring acidity and to ensure a cool fermentation. Upon delivery to the winery the fruit was whole-cluster pressed and left to settle in a stainless-steel tank for two days before being racked off the lees. The wine was fermented in 82% stainless steel and 18% neutral French oak barrels for about three weeks. Post fermentation the wine was left to age completely in neutral French oak for 7 months. In July 2019 the wine was blended to taste and bottled to just 270 cases.
When preparing your dish, the secret to keep in mind with this Soleil Blanc is to consider its natural peppery & tropical flavors. High on the intensity spectrum, you will find that this delightful white blend will pair with a wide variety of foods from Broiled Lobster & Tempura Shrimp to rich meats like Lebanese 7 Spice Lamb & Garlic Roasted Lemon Chicken. A salad with Cantaloupe, Feta and Mint will also pair well.
The 2018 Soleil Blanc should be enjoyed now and for up to an additional 18 months. It is not a candidate for long term aging.
