The zesty nose of green bell peppers and jalapenos is enhanced by fruity aromas of blackberry pie, sweet plums, and blueberries, complemented by lovely violet floral notes. Plum flavors and grippy tannins star on the palate, with notes of blueberry cobbler, black cherry, molasses and dark chocolate preceding the bold, pleasurable finish.
Our Zephyr blend is full-bodied with expressions of fruit, floral, cedar, smoke, bitter chocolate, and powerful notes of grape and oak tannins as we harvested from three vineyards, and three regions: Paso Robles, Santa Barbara County, and Santa Ynez Valley. Our four delightful varietals of Cabernet Franc, Cabernet Sauvignon, Petit Verdot, and Merlot create this blend for a nice aging wine as the tannins settle in the bottle aging process of minimum 6 months. We aged our varietals individually on 26% new French oak barrels for approximately 15 months and blended and bottled to 375 cases in January 2020.
This beautiful blend pairs wonderfully with a roasted prime rib with porcini jus, braised lamb shanks, or a grilled burger topped with caramelized onions and bleu cheese.
The 2018 Zephyr can be enjoyed now and for up to an additional 5-7 years if stored in proper conditions.
