A unique potpourri of aromas, including notes of goji berry, orange rinds, cacao, and red currants, complemented by an underlying earthy character. Tart and weighty on the palate with notes of sour cherry, cranberries, nettle and coffee, with nutty character and a hint of sunflower seeds.
The Merlot grapes were hand-harvested from a single organic vineyard in Santa Ynez Valley on October 17th 2019. Our three and half tons of grapes were crushed de-stemmed, and cold soaked for 20 hours. We used the saignée method to extract the color of the pigment, and characters from the tannin. The Merlot juice was inoculated with a Bordeaux style yeast which helps highlight its bold Blackberry, Pink Peppercorn, Red Currant and Cocoa nib characters influenced from the grape and oak tannins. This fermentation was complete in 14 days. It was cold and heat stabilized which led to filtering for bottling in February, 2020.
